Easy 2 Ingredient Pumpkin Brownies

Since this recipe was so easy (and seasonal!), I had to give it a try. I already had brownie mix, so I only had to buy the pumpkin puree!

IMG_5933True to the recipe, you mix the brownie mix and pumpkin puree together and bake, that simple!


The odd thing about this recipe is that they didn’t have a brownie consistency, more like a lemon bar type texture. I’d be interested to see how they are with the normal brownie mix ingredients (eggs, vegetable oil).

IMG_5934Though, my co-workers ate them all, so it was a win-win! I feel like this entry should be longer, but that’s it really, super easy, fast recipe!

Mini Pumpkin Cinnamon Rolls

I almost labeled this one a Pinterest Fail. When I saw this recipe on Pinterest, it looked so easy and seasonal, I had to try it!

I wasn’t able to find the Pillsbury seamless dough sheet, so I used the crescent rolls instead. I made them into one dough sheet and slathered pumpkin butter and cinnamon sugar on top. Then I rolled them in a log to cut into mini rolls. This is where it went wrong, my log did not look as nice as in the recipe photos. Also, they were very flattened when I cut them.

Luckily, they baked fine and the icing cut out any imperfections :) I might’ve overcooked them a bit, I was watching Coyote Ugly and the music was loud haha. I recommend this as a quick and easy fall recipe. They were delicious right out of the oven and perfect for a sweet treat! Just look out for the icing, the recipe makes wayy too much, though I shouldn’t complain.

3 Ingredient Peanut Butter Cookies with Hershey’s Kisses!

I’ve previously experimented with the 3 ingredient cookie scenario to less than stellar results. Though, when I saw this post that recommended adding Hershey’s Kisses, I knew I had to give them another go!

All you need is an egg, one cup of peanut butter, and one cup of sugar. Once mixed, you roll a ball of dough around the Hershey’s Kisses. Super easy!

Not much else to say about these. They were super easy and delicious! My co-workers enjoyed them too. My only critique is that they get dry after a few days, so eat them fast!

Pasta with Yogurt and Caramelized Onions

I loved grilled onions, so I knew this recipe would be a winner going in. Luckily, it was just as delicious as I thought and will definitely be in rotation for meals to come!


I couldn’t find the tagliatelle pasta needed for the recipe, so I stuck with fettuccine which worked well. The longest portion was caramelizing the onions, which takes a good 20 mins (but so worth it).


While grilling the onions, I boiled the pasta, then mixed the yogurt with a little of the pasta water. Then I added the yogurt to the pasta and topped with onions and cheese. Super simple! I even had a good amount left over for the next night. I’d count this one as a winner!

Veggie Pizza


I’m still on the hunt for easy pizza recipes to try out on my pizza stone. This one was titled Quick and Easy Veggie Pizza, so I thought I’d give it a whirl.

IMG_5901I must admit that I was feeling lazy the night that I made this and didn’t feel like roasting the vegetables, so I just added the broccoli raw. Also, I really need to get a rolling pin, the dough just doesn’t want to stretch for me (hence the weird shape).

In the end, it did deliver on being quick and easy. Though, the taste was mediocre, it reminded me of a microwave pizza. As I’ve learned before, quick and easy isn’t always the best quality. Perhaps I’ll put in some more effort next time and make a better pizza!

Roasted Buddha Bowl

I’ve been on the hunt to try and replicate Cafe Gratitude’s yummy bowls. This Roasted Buddha Bowl recipe was super easy and equally delicious!’

I got all the ingredients from Trader Joe’s for this one: broccoli, garbanzo beans, brown rice, and goddess dressing. You simple roast the vegetables in the oven and heat up the brown rice. Then, make the bowl by layering the rice and vegetables, then top with the dressing.

My only critique of this recipe would be the garbanzo beans. I felt like the ratio was too much. I’ll probably do less of those next time. I’m excited to try this again sometime with brussels sprouts!

White Pizza

Ever since I got a pizza stone, I’ve been determined to try out some pizza recipes. This one was by far the most simple I’ve seen and it was equally delicious!


I bough some of the pre-made wheat pizza dough from Trader Joe’s for the crust. I stretched the dough over the stone, spread some olive oil over and topped with mozzarella cheese and Italian Seasoning. I decided to add some feta cheese and spinach as well. The spinach was just ok, I might try another vegetable sometime, but I was trying to be healthy :)

The only downfall was the fact that I don’t think I stretched the dough enough, it was very thick once baked! Then again, I like doughy pizza, so it wasn’t such a loss :)
